Galangal Fried Chicken Wings

Ingredients:

  • 4 chicken wings
  • 1 thumb-sized piece of turmeric
  • 1 thumb-sized piece of ginger
  • 1 lemongrass stalk
  • 3 bay leaves
  • 4 cloves garlic
  • 6 shallots
  • 1 teaspoon coriander seeds
  • 100 grams galangal
  • ½ tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon granulated sugar
  • 1 tablespoon chicken flavor seasoning
  • ¾ cup water
  • Oil for frying

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the garlic, shallots, ginger, turmeric, and coriander seeds into a smooth paste. You can use a mortar and pestle or a blender for this step.

  2. Grate the Galangal: Grate the galangal until it is finely shredded. Mix the grated galangal with the prepared spice paste to combine the flavors.

  3. Cook the Chicken: Heat a pot over medium heat and add enough oil to cover the bottom. Add the spice paste, lemongrass, and bay leaves to the pot. Sauté until the mixture becomes fragrant.

  4. Add the Chicken Wings: Place the chicken wings into the pot and stir to coat them evenly with the spice mixture.

  5. Season the Chicken: Pour in the water and season with salt, chicken flavor seasoning, granulated sugar, and black pepper. Stir well to combine all the ingredients.

  6. Simmer: Allow the mixture to come to a boil, then reduce the heat to a simmer. Let it cook until the liquid has reduced and the chicken is cooked through. The chicken wings should be tender and the sauce should be thickened.

  7. Rest the Chicken: Once cooked, turn off the heat and let the chicken wings rest in the pot. For a more intense flavor, allow them to marinate for a few hours or overnight.

  8. Fry the Chicken: Heat oil in a frying pan over medium-high heat. Remove the chicken wings from the pot and fry them in the hot oil until they are crispy and golden brown.

  9. Crisp Up the Spice Mixture: Optional: Strain the remaining spice mixture from the pot and fry it separately until crispy. This will create a crunchy, flavorful garnish.

  10. Serve: Serve the crispy galangal fried chicken wings hot with steamed rice and your favorite sambal for an authentic and delicious meal.
