Ayam Goreng Lengkuas: A Crispy Delight with Aromatic Galangal
Ingredients:

- 2 whole kampung chickens, cut into 4 parts each (about 1 kg of regular chicken can be used as a substitute)
- 100 grams of galangal, coarsely grated
- 3 bay leaves
- 4 kaffir lime leaves, torn
- Spice Paste:
- 6 shallots
- 6 cloves garlic
- 1 tablespoon coriander seeds
- 3 candlenuts
- 1 piece of turmeric root (approximately 1 inch)
- 1 piece of ginger (approximately 1 inch)
- 1 stalk lemongrass, white part only
- Salt to taste
Instructions:

Prepare the Chicken:
- Clean the chicken pieces thoroughly and set aside.

Marinate the Chicken:
- In a mixing bowl, combine the spice paste with the coarsely grated galangal. Rub this mixture thoroughly onto the chicken pieces, ensuring each piece is well-coated.
- Allow the chicken to marinate for about 30 minutes.

Cook the Chicken:
- Add enough water to cover the chicken in the pot. Incorporate the bay leaves and kaffir lime leaves.
- Pressure cook the chicken until tender. Alternatively, you can simmer the chicken until it is thoroughly cooked and tender.

- Once the chicken is tender, remove it from the pot. Strain and discard the excess galangal and other spices.
- Pat the chicken pieces dry with paper towels to remove excess moisture.

- Heat oil in a frying pan. Fry the chicken pieces until they are golden brown and crispy. Remove from the pan and drain on paper towels.

- In the same oil, fry the remaining grated galangal until crispy. Remove and drain on paper towels to remove excess oil.
