Ayam Goreng Lengkuas: A Crispy Delight with Aromatic Galangal

Ingredients:

  • 2 whole kampung chickens, cut into 4 parts each (about 1 kg of regular chicken can be used as a substitute)
  • 100 grams of galangal, coarsely grated
  • 3 bay leaves
  • 4 kaffir lime leaves, torn
  • Spice Paste:
    • 6 shallots
    • 6 cloves garlic
    • 1 tablespoon coriander seeds
    • 3 candlenuts
    • 1 piece of turmeric root (approximately 1 inch)
    • 1 piece of ginger (approximately 1 inch)
    • 1 stalk lemongrass, white part only
    • Salt to taste

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly and set aside.
  2. Marinate the Chicken:

    • In a mixing bowl, combine the spice paste with the coarsely grated galangal. Rub this mixture thoroughly onto the chicken pieces, ensuring each piece is well-coated.
    • Allow the chicken to marinate for about 30 minutes.
  3. Cook the Chicken:

    • Add enough water to cover the chicken in the pot. Incorporate the bay leaves and kaffir lime leaves.
    • Pressure cook the chicken until tender. Alternatively, you can simmer the chicken until it is thoroughly cooked and tender.
  4. Prepare for Frying:

    • Once the chicken is tender, remove it from the pot. Strain and discard the excess galangal and other spices.
    • Pat the chicken pieces dry with paper towels to remove excess moisture.
  5. Fry the Chicken:

    • Heat oil in a frying pan. Fry the chicken pieces until they are golden brown and crispy. Remove from the pan and drain on paper towels.
  6. Prepare the Galangal Garnish:

    • In the same oil, fry the remaining grated galangal until crispy. Remove and drain on paper towels to remove excess oil.
  7. Serve:

    • Sprinkle the crispy galangal over the fried chicken pieces.
    • Serve hot and enjoy this aromatic and crispy Ayam Goreng Lengkuas as a delightful meal.
