Ayam Goreng Lengkuas Recipe
Ingredients:
- 1 kg chicken, cut into pieces
- 1 stalk lemongrass, crushed
- For the Spice Paste:
- 10 cloves garlic
- 2 large pieces of turmeric (about 2 inches each)
- 1 piece of ginger (about 2 inches)
- 2 pieces of galangal (grated, if preferred)
- 1/2 teaspoon coriander seeds
- 350 ml water
- Salt to taste

Prepare the Chicken: Begin by washing the chicken pieces thoroughly. Place them into a heavy-bottomed pot or Dutch oven.

Cook the Spice Paste: Add the crushed lemongrass and the spice paste ingredients (garlic, turmeric, ginger, galangal, and coriander) to the pot. Turn on the heat to a low-medium setting. Stir the ingredients occasionally, allowing the spices to cook for about 5 minutes. This helps the flavors meld together and become aromatic.

Simmer: Pour in the 350 ml of water. Stir everything together and bring the mixture to a gentle simmer. Continue to cook on low heat, allowing the chicken to braise until most of the water has evaporated, and the chicken is thoroughly cooked. Fry the Chicken: Once the water has almost completely evaporated and the chicken has absorbed the flavors, heat a little oil in a frying pan over medium heat. Fry the chicken pieces until they turn golden brown and crispy. If desired, you can also fry the remaining spice paste in a bit of oil for added flavor, making it a healthier option.
