2 tsp Cornstarch
1/2 tsp Chili paste
2 Eggs
12-14 Egg roll wrappers
Peanut oil for frying

Instructions:

  1. Prepare Ingredients:

    • Hint: Put egg roll wrappers in the freezer the night before, then thaw about 1 hour before using. This helps them separate more easily.
    • Brown the ground pork with 1 tablespoon of soy sauce in a wok, drain, remove from the wok, and set aside.
  2. Stir-fry Vegetables:

    • Add a splash of peanut oil to the wok and stir-fry the shredded Napa cabbage, diced bamboo shoots, chopped scallions, and mung bean sprouts until they are slightly wilted, about 3-4 minutes.
  3. Combine Pork and Vegetables:

    • Once the vegetables are cooked, add the browned ground pork back into the wok.
  4. Prepare Sauce:

    • In a separate bowl, mix together 1 tablespoon of soy sauce, 1 tablespoon of hoisin sauce, 2 teaspoons of cornstarch, and 1/2 teaspoon of chili paste.

    • Carefully add the egg rolls a few at a time, frying until they are golden brown and crispy, about 3-4 minutes per side.
    • Remove the egg rolls from the oil and drain them on paper towels.
