Crispy Gurame Fillet with Spicy Tauco Sauce

Ingredients:

For the Fish Marinade:

  • 1 whole gurame fish (snakehead fish)
  • Juice of 1 lime
  • Salt, to taste
  • Ground black pepper, to taste

For the Coating:

  • 1 egg white
  • 6 tablespoons all-purpose flour
  • 2 tablespoons tapioca flour

For the Sauce:

  • 6 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 large green chilies, sliced
  • 2 stalks green onions, chopped
  • 1 tomato, chopped
  • 3 cm ginger, minced
  • 6 red chili peppers, whole
  • 60 grams spicy tauco (fermented soybean paste), preferably Tahara brand
  • 1 tablespoon tapioca flour mixed with water (or cornstarch)
  • Salt, to taste (be cautious with the amount if tauco is salty)
  • 1 teaspoon granulated sugar
  • 4 tablespoons sweet soy sauce
  • Cooking oil, for frying

Instructions:

  1. Prepare the Fish:

    • Clean and fillet the gurame fish. Rinse the fillets under cold water and pat them dry with paper towels.
    • Rub the fillets with lime juice, salt, and ground black pepper. Let them marinate for about 15 minutes.
  2. Coat the Fish:

    • In a shallow bowl, beat the egg white until slightly frothy.
    • In another bowl, mix the all-purpose flour and tapioca flour.
    • Dip each fillet into the egg white, then coat with the flour mixture, pressing gently to adhere. Set aside.
  3. Fry the Fish:

    • Heat a generous amount of oil in a large frying pan over medium-high heat.
    • Fry the coated fish fillets in hot oil until golden and crispy, about 4-5 minutes per side. Remove and drain on paper towels.
  4. Prepare the Sauce:

    • In a separate pan, heat a small amount of oil over medium heat.
    • Sauté the shallots until fragrant, then add the minced garlic, green chilies, ginger, and chopped tomato. Cook until the vegetables are softened.
    • Stir in the spicy tauco and mix well. Add the tapioca flour mixture and a splash of water to create a thick sauce.
    • Season the sauce with salt, sugar, and sweet soy sauce. Adjust the seasoning to taste.
    • Add the chopped green onions and cook for an additional minute. Remove from heat.
  5. Serve:

    • Arrange the crispy fish fillets on a serving plate.
    • Pour the spicy tauco sauce over the fillets.
