Preparation Steps:

To create the perfect crunchy salmon, start by preparing the breading. Begin by cutting the bread into small pieces and placing them in a food processor. Add the fresh dill, the thyme leaves (discarding the stems), and the rosemary needles to the processor. Pour in the olive oil, followed by the lemon zest, salt, and freshly ground white pepper. Pulse until the mixture reaches a rough, coarse consistency – not too fine, so that it retains a delightful crunch.

Now, focus on the salmon fillets. Carefully remove the skin using a sharp knife with a thin blade. Lay the fillets on a baking tray lined with parchment paper. Generously cover each piece of salmon with the prepared breading, pressing it down lightly with your hands to ensure it sticks well and coats the salmon evenly.

Preheat your oven to 190°C (375°F) on the fan setting, and once ready, place the salmon in the oven. Let the salmon bake for about 20 minutes, or until the breading turns a beautiful golden brown and the salmon is cooked through, tender, and flaky inside.

After the baking time is up, remove the tray from the oven, and allow the salmon to rest for a few minutes before serving. This crunchy, flavorful salmon is perfect when paired with a light salad or roasted vegetables.
