Instructions:

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Blend flours, sugar, salt, and spices in a food processor until well combined.

  3. In a separate bowl, whisk together oil and water until emulsified.

  4. With the food processor running, slowly pour the oil and water mixture into the flour mixture until it forms a smooth ball of dough.

  6. Transfer the rolled-out dough to a cookie sheet by draping it over your rolling pin. Don’t worry if it gets slightly distorted during transfer.

  7. Using a long, sharp knife, trim the dough into a neat rectangle and score it into 1 1/2-inch squares, being careful not to cut all the way through.
