Ayam Geprek: Crispy Fried Chicken with Spicy Sambal

Ingredients:

For the Chicken:

  • 1 boneless chicken breast
  • 1 packet Kobe fried chicken flour mix
  • Salt, sugar, and pepper to taste

For the Sambal:

  • 20 small red chilies (cabe rawit)
  • 6 large red chilies (cabai merah besar)
  • 5 shallots (bawang merah)
  • 2 garlic cloves (bawang putih)
  • 1 tomato

Instructions:

  1. Prepare the Chicken:

    • Begin by marinating the chicken breast with salt, minced garlic, and pepper. Allow it to marinate for approximately 20-30 minutes to absorb the flavors.
  2. Prepare the Coating:

    • Divide the Kobe fried chicken flour mix into two separate bowls: one for the wet batter and one for the dry coating.
    • Dredge the marinated chicken first in the wet batter, then coat it thoroughly with the dry flour mix. For an extra crispy texture, repeat this step once more, coating the chicken twice in each mixture.
  3. Fry the Chicken:

    • Heat oil in a frying pan over medium heat. Fry the coated chicken until it turns golden brown and crispy. Ensure the chicken is cooked through, then remove from the oil and drain on paper towels.
  4. Make the Sambal:

    • Coarsely chop all the sambal ingredients: small red chilies, large red chilies, shallots, garlic cloves, and tomato.
    • In a skillet, sauté the chopped ingredients until they become soft and fragrant. Add sugar and salt according to your taste preferences. Continue to cook until the sambal ingredients are well blended and the flavors have melded together.
    • Use a mortar and pestle to crush the cooked sambal ingredients into a chunky paste.
  5. Assemble the Dish:

    • Pour the freshly made sambal over the fried chicken. Using the back of a spoon or a mortar and pestle, gently press down on the sambal to “smash” or “geprek” the sambal into the chicken, ensuring the spicy mixture seeps into the crispy coating.
  6. Serve:

    • Serve the Ayam Geprek immediately while the chicken is still hot and crispy, allowing the spicy sambal to enhance every bite.
