Ingredients

  • 1/2 kg fresh catfish, cleaned
  • A handful of fresh basil leaves
  • Spice Paste:
    • 5 shallots
    • 3 cloves of garlic
    • 1 thumb-sized piece of turmeric
    • 1 thumb-sized piece of ginger
    • 4 candlenuts (or macadamia nuts as a substitute)
  • Additional Ingredients:
    • 1 thumb-sized piece of galangal
    • 2 bay leaves
    • 1 tablespoon Royco seasoning (or a similar seasoning mix)
    • 1 teaspoon sugar
    • Salt to taste
    • 400 ml water

Instructions

  1. Prepare the Spice Paste: Begin by blending the shallots, garlic, turmeric, ginger, and candlenuts into a smooth paste. You can use a food processor or mortar and pestle for this step.

  2. Cook the Spice Paste: Heat a generous amount of oil in a large skillet or frying pan over medium heat. Add the blended spice paste and sauté until fragrant, which should take about 2-3 minutes. Make sure the oil is sufficient to cook the paste and infuse the flavors.

  3. Add the Catfish: Once the spice paste is aromatic, carefully add the cleaned catfish to the pan. Cook for a few minutes until the fish starts to turn opaque and is slightly tender.

  4. Add Liquid and Seasoning: Pour in approximately 400 ml of water, or enough to just cover the fish. Stir in the sugar, Royco seasoning, and salt. Adjust the seasoning to taste.

  5. Simmer the Dish: Add the galangal and bay leaves to the pan. Cover with a lid and let the fish simmer on low heat. Cook until the fish is fully cooked and the liquid has reduced by half, creating a slightly thickened sauce.

  6. Final Touches: Once the water has mostly evaporated and the fish is cooked through, turn off the heat. Garnish with fresh basil leaves for a burst of fresh flavor.

  7. Serve: Transfer the catfish to a serving plate. Remember to say a little prayer before enjoying your meal. Serve hot and enjoy this aromatic and flavorful dish!
