Ayam Geprek Dower: A Flavorful Indonesian Chicken Delight

Ingredients:

  • 250 grams chicken, cut into small pieces
  • 1 packet fried chicken flour mix (Tepung Sasa)
  • 5 tablespoons all-purpose flour
  • Cooking oil
  • 1 lime (juice)
  • Red bird’s eye chilies, to taste
  • Green bird’s eye chilies, to taste
  • Curly red chilies, to taste
  • Shrimp paste (terasi), to taste
  • Salt, to taste

Instructions:

  1. Prepare the Chicken: Begin by cutting the chicken into small, bite-sized pieces. Rinse the pieces thoroughly and squeeze lime juice over them to eliminate any unwanted odors. Drain the chicken well and set aside.

  2. Coat the Chicken: In a mixing bowl, combine the chicken pieces with all-purpose flour, ensuring each piece is evenly coated. Next, dredge the chicken in the fried chicken flour mix (Tepung Sasa). Note: Do not add water during this process. The flour coating should stick to the chicken without becoming watery.

  3. Fry the Chicken: Heat oil in a frying pan over medium heat. Once hot, add the coated chicken pieces and fry until they turn golden brown and crispy. Remove the chicken from the oil and drain on paper towels.

  4. Prepare the Sambal: For the sambal, grind together the red and green bird’s eye chilies, curly red chilies, and shrimp paste in a mortar and pestle. Add a pinch of salt to taste. If desired, add a small amount of leftover oil from frying the chicken to the sambal for added flavor.

  5. Assemble and Serve: Place the fried chicken pieces on a serving plate and top with the freshly made sambal. Serve immediately for a delightful and spicy Indonesian meal.
