Crispy Indonesian Chicken with Spicy Sambal Dabu-Dabu
Embark on a flavorful journey with this Crispy Indonesian Chicken, beautifully paired with two delicious sambals: Sambal Bawang and Sambal Dabu-Dabu. Ingredients:
For the Chicken:

- 250 grams of chicken breast
- 2 packs of all-purpose flour
- 1 egg, beaten
For Sambal Bawang:
- 15-20 bird’s eye chilies
- 5 shallots
- 4 cloves garlic
- Salt and sugar, to taste
For Sambal Dabu-Dabu:
- 3 green tomatoes, diced
- 4 red tomatoes, diced
- 1 handful of bird’s eye chilies, sliced
- 4 curly red chilies, sliced
- 1 lime
- 5 shallots, thinly sliced
- 5 tablespoons of hot oil
- Salt and sugar, to taste

Prepare the Chicken:
- Wash the chicken thoroughly and pat dry with paper towels.
- For the wet batter, mix one pack of all-purpose flour with a little water to form a smooth consistency. Reserve the remaining flour for coating.
- Coat the chicken pieces in the wet batter, then dip them into the beaten egg, and finally dredge in the reserved flour. Gently press the flour onto the chicken to ensure it sticks well.

Fry the Chicken:
- Heat a sufficient amount of oil in a deep pan or fryer over medium-high heat.
- Fry the coated chicken pieces in the hot oil until they are golden brown and crispy. Remove from the oil and drain on paper towels.

Prepare Sambal Bawang:
- Using a mortar and pestle, roughly grind together the shallots, garlic, bird’s eye chilies, salt, and sugar until you have a coarse paste.
- Heat a small amount of oil in a pan and briefly fry the sambal paste until fragrant. Set aside.

- Combine the diced green and red tomatoes, sliced bird’s eye chilies, and curly red chilies in a bowl.
- Add the thinly sliced shallots, then season with salt and sugar.
- Squeeze the juice of the lime over the mixture and stir in the hot oil. Mix well to combine all the flavors.

- In a serving mortar or bowl, place the crispy fried chicken pieces and top with a generous amount of sambal bawang. Gently pound or press the chicken with the sambal to infuse the flavors.
