Cireng with Kampung Chicken Filling
Ingredients
For the Cireng Dough:
- 250 grams tapioca flour
- 50 grams all-purpose flour
- 50 grams rice flour or cornstarch
- Seasoning to taste
- Salt to taste
- Hot water as needed
For the Filling:
- 4 pieces of kampung chicken (village chicken)
- 4 shallots
- 1 garlic clove
- Candlenut
- 20 bird’s eye chilies (adjust to taste)
- Salt to taste
- Seasoning to taste
- Sugar to taste
- Water as needed
Instructions
Preparing the Cireng Dough:
- Combine Dry Ingredients: In a mixing bowl, combine the tapioca flour, all-purpose flour, and rice flour or cornstarch. Add seasoning and salt to taste.
- Add Hot Water: Gradually pour in hot water while mixing continuously until the dough becomes smooth and pliable.
- Shape the Dough: Shape the dough into small circles or your desired shape and set aside.
Preparing the Filling:
- Blend the Spices: Blend the shallots, garlic, candlenut, and bird’s eye chilies until smooth.
- Sauté the Spices: In a pan, heat a small amount of oil and sauté the blended spices until fragrant.
- Add Chicken: Add the shredded kampung chicken to the pan and cook until the chicken is well mixed with the spices.
- Season: Add salt, seasoning, and sugar to taste. Pour a small amount of water to help the flavors blend and let it cook until the mixture is slightly dry. Remove from heat and let it cool.
Assembling the Cireng:
- Fill the Dough: Take a piece of the dough, place a spoonful of the chicken filling in the center, and cover with another piece of dough. Press the edges together, using a bit of water to seal the edges and ensure there are no gaps.
- Prepare for Frying: Heat oil in a frying pan over medium heat.
- Fry the Cireng: Once the oil is hot, carefully add the filled cireng. Fry until golden brown, flipping occasionally to ensure even cooking.
- Serve: Remove the cireng from the oil and let them drain on paper towels. Serve hot with your favorite dipping sauce.
