Egg Roll Lipat Recipe: A Delightful Indonesian Treat

Egg Roll Lipat, also known as folded egg rolls, is a popular Indonesian dessert that combines a crisp exterior with a tender, flavorful interior. This recipe is a delightful treat that’s perfect for any occasion, blending the rich taste of margarine and butter with the sweet touch of vanilla and taro. Here’s how you can create these delicious bites at home:

Ingredients:

Ingredients A:

  • 2 large eggs
  • 75 grams sugar
  • 1/2 teaspoon SP (a type of cake emulsifier, often used in Indonesian baking)
  • 1/2 teaspoon vanilla extract

Ingredients B:

  • 75 grams all-purpose flour (low protein)
  • 1 tablespoon cornstarch (or tapioca flour if available)
  • 1/2 tablespoon milk powder
  • 1/2 teaspoon baking soda

Ingredients C:

  • 25 grams margarine
  • 25 grams butter

Instructions:

  1. Prepare the Margarine and Butter Mixture:

    • In a small saucepan, heat the margarine and butter over low heat until fully melted. Once melted, set aside to cool slightly.
  2. Mix Ingredients A:

    • In a mixing bowl, beat the eggs, sugar, SP, and vanilla extract until the mixture becomes light and fluffy.
  3. Combine Ingredients A and B:

    • Sift together the all-purpose flour, cornstarch, milk powder, and baking soda. Gradually add this dry mixture into the egg mixture, stirring gently until well combined.
  4. Incorporate the Margarine and Butter:

    • Add the melted margarine and butter into the batter, mixing thoroughly until the ingredients are fully integrated. For added flavor, you can incorporate different flavorings into the batter: add vanilla powder to the white batter and taro powder to the slightly brown batter, if desired.
  5. Prepare the Egg Roll Lipat:

    • Spoon about 1 tablespoon of batter into a mold or onto a hot, lightly greased griddle. Spread it out into a thin layer. Cook until the edges turn golden brown.
  6. Fold or Roll:

    • While the egg roll is still warm, fold it into four parts to create the traditional lipat shape. Alternatively, you can roll it up if you prefer a classic egg roll shape.
  7. Cool and Serve:

    • The egg rolls will feel soft when hot, but they will firm up as they cool. Allow them to cool completely before serving.

Tips:

  • For a more authentic texture, you can substitute cornstarch with sago or tapioca flour if you have it on hand.
  • Experiment with different flavorings in the batter to suit your taste preferences.

Enjoy your homemade Egg Roll Lipat, a delightful treat that is sure to impress your family and friends!
