Lele Goreng: A Flavorful Fried Catfish Recipe

Ingredients

  • 1 kg catfish (Ikan Lele)
  • 2 cloves garlic
  • 4 cm turmeric (optional)
  • 3 lime leaves (Daun Jeruk)
  • 1 teaspoon coriander (Ketumbar)
  • Salt, to taste
  • Water, as needed
  • Oil, for frying

Instructions

  1. Prepare the Catfish: Begin by thoroughly cleaning the catfish, ensuring to remove any impurities from inside the fish. Carefully make a slit along the belly of the fish, taking care not to cut all the way through; this allows the marinade to penetrate deeply.

  2. Make the Marinade: In a blender or mortar and pestle, combine the garlic, turmeric (if using), lime leaves, coriander, and salt. Blend until you achieve a smooth paste, adding just enough water to facilitate blending.

  3. Marinate the Fish: Place the prepared catfish in a bowl and pour the marinade over it. Ensure the fish is well-coated with the marinade. Let it soak for about 10 minutes, allowing the flavors to meld and penetrate the fish.

  4. Fry the Catfish: In a deep frying pan or pot, heat a generous amount of oil over medium heat. It’s important to ensure that the fish is fully submerged in the oil while frying to achieve even cooking. Carefully add the marinated catfish to the hot oil and fry until golden brown and crispy on all sides.
