Crispy Indonesian Fried Chicken with Kaffir Lime Leaves
Ingredients:
- 500 grams chicken (cleaned and briefly boiled)
- 5 cloves garlic (whole, unpeeled)
- 5 kaffir lime leaves
- Ingredients for the spice paste:
- 3 shallots
- 6 cloves garlic
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- 3 tablespoons cornstarch
- 1 egg
- Salt, sugar, black pepper, and ground coriander to taste
- Oil for frying

Prepare the Spice Paste:
- In a mixing bowl, combine the shallots, garlic, ginger, and turmeric. Blend into a smooth paste. You can use a food processor or mortar and pestle for this step.
- Add the cornstarch, egg, salt, sugar, black pepper, and ground coriander to the spice paste. Mix thoroughly until all ingredients are well incorporated.
