Ayam Tepung Penyet: A Crispy Indonesian Delight

Ingredients:

  • 1 piece of fried chicken
  • 7 red bird’s eye chilies
  • 1 garlic clove
  • Salt, to taste
  • Flavor enhancer (optional), to taste
  • Oil, for frying

Instructions:

  1. Prepare the Sambal: Begin by crushing the red bird’s eye chilies and garlic clove together using a mortar and pestle. Add a pinch of salt and, if desired, a flavor enhancer to taste. Continue to grind until you achieve a coarse, aromatic paste.

  2. Cook the Sambal: Heat a generous amount of oil in a frying pan over medium heat. Once the oil is hot, carefully pour 1-2 tablespoons of the hot oil into the sambal paste. Stir well to combine, allowing the sambal to cook slightly in the residual heat. This step infuses the sambal with a deeper flavor and slight crispness.

  3. Assemble the Dish: Place the fried chicken piece atop the prepared sambal. Gently press down on the chicken to slightly flatten it, allowing the sambal to coat the surface of the chicken. This step is known as “penyet” and helps the flavors meld together.
