Ayam Goreng Recipe: A Delightful Indonesian Fried Chicken

Ingredients:

For the Chicken:

  • 1 kg chicken, cut into pieces
  • Cooking oil, as needed

For the Marinade:

  • 1/2 packet ginger powder
  • 1/4 tablespoon coriander seeds
  • 3 tablespoons salt
  • 1 packet turmeric powder
  • 1 packet fried chicken seasoning mix
  • 5 shallots
  • 3 garlic cloves
  • 1/2 packet chicken stock cube
  • 250 ml water

For the Sambal (Chili Sauce):

  • 3 shallots
  • 2 garlic cloves
  • 12 bird’s eye chilies
  • 3 red curly chilies
  • 1 tomato
  • 1/2 piece of palm sugar
  • 1/2 packet chicken stock cube
  • 1/2 teaspoon salt

Instructions:

  1. Prepare the Marinade: In a blender, combine the shallots, garlic, ginger powder, coriander seeds, salt, turmeric powder, fried chicken seasoning mix, and chicken stock cube with 250 ml of water. Blend until smooth to create a flavorful marinade.

  2. Marinate the Chicken: Place the chicken pieces in a large bowl and pour the marinade over them. Make sure each piece is well-coated. Allow the chicken to marinate for at least 30 minutes, or longer if time permits, to let the flavors penetrate.

  3. Cook the Chicken: In a large pot, add the marinated chicken along with any remaining marinade. Cook over medium heat until the water has evaporated and the chicken is thoroughly cooked, about 30-40 minutes.

  4. Fry the Chicken: Heat cooking oil in a large pan over medium heat. Fry the chicken pieces in batches, turning occasionally, until they are golden brown and crispy. Remove from the pan and drain on paper towels.

  5. Prepare the Sambal: For the sambal, heat a small amount of oil in a pan over medium heat. Add the shallots, garlic, bird’s eye chilies, red curly chilies, and tomato. Cook until the vegetables are softened and fragrant. Transfer the mixture to a mortar and pestle, or a food processor, and grind until smooth.

  6. Season the Sambal: Return the sambal to the pan, add the palm sugar, chicken stock cube, and salt. Cook for an additional 5 minutes, stirring occasionally, until the sambal has thickened and the flavors have melded together.

  7. Serve: Serve the crispy ayam goreng hot, accompanied by the freshly made sambal for a spicy and flavorful meal. Enjoy!
