Ayam Goreng Bumbu Ungkep (Indonesian Fried Chicken)

Ingredients:

  • 1 kg chicken, cleaned thoroughly
  • Cooking oil for frying
  • 1 stalk lemongrass
  • 1 turmeric leaf
  • 2 bay leaves

Bumbu Ungkep (Spice Paste):

  • 5 shallots
  • 8 cloves garlic
  • 3 cm ginger
  • 3 cm turmeric
  • 5 cm galangal
  • 3 candlenuts
  • 1 teaspoon coriander seeds
  • Salt to taste

Instructions:

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, ginger, turmeric, galangal, candlenuts, and coriander seeds into a smooth paste. Add salt to taste.
  2. Marinate the Chicken:

    • In a large bowl, combine the chicken with the spice paste. Mix well to ensure the chicken is evenly coated with the paste.
    • Add water to the bowl, ensuring the chicken is submerged. Add the lemongrass, turmeric leaf, and bay leaves.
  3. Cook the Chicken:

    • Transfer the marinated chicken mixture to a pot. Cook on medium heat until the liquid reduces and the chicken absorbs the flavors, becoming tender.
  4. Drain and Fry:

    • Remove the chicken from the pot and let it drain.
