Tahu Telur: A Delightful Indonesian Egg and Tofu Dish
Ingredients:
- 4 large eggs
- 2 blocks tofu
- 4 tablespoons all-purpose flour
- 3 tablespoons Sajiku flour (or any seasoned flour)
- Chopped green onions (as needed)
For the Spice Blend:
- 2 red chilies (cabe rawit)
- 3 cloves garlic
- 6 shallots
- Ground pepper (to taste)

Prepare the Tofu:
Begin by mashing the tofu thoroughly using a fork until it achieves a smooth, almost creamy consistency. This ensures the tofu will blend well with the other ingredients and creates a unified texture in your dish. -
Combine the Eggs and Tofu:
Crack the eggs into a bowl and beat them lightly. Add the beaten eggs to the mashed tofu and mix them together until the mixture is well combined. This forms the base of your Tahu Telur. -
Prepare the Spice Blend:
Using a mortar and pestle or a food processor, grind the red chilies, garlic, and shallots into a fine paste. If using a food processor, you may need to scrape down the sides occasionally to ensure an even blend. Add the ground pepper to the spice paste. -
Incorporate the Dry Ingredients:
In a separate bowl, mix the all-purpose flour and Sajiku flour. Gradually add this flour mixture to the tofu and egg mixture, stirring continuously. This will help bind the ingredients together and give your dish a slightly crispy texture when cooked. -

Add the freshly ground spice blend to the tofu-egg mixture, followed by the chopped green onions. Stir everything together until all ingredients are well incorporated and evenly distributed. -

Heat a non-stick frying pan (Teflon) over medium heat and add a generous amount of cooking oil. Allow the oil to heat up until it’s shimmering but not smoking. Using a spoon, drop spoonfuls of the mixture into the hot oil, spreading them out slightly to form small patties. Fry in batches to avoid overcrowding the pan. -
Cook Until Golden:
Fry each side of the patties until they are golden brown and crispy, which should take about 2-3 minutes per side. Flip them gently to ensure even cooking and to avoid breaking them apart. -

Once cooked, remove the patties from the pan and drain on paper towels to remove excess oil. Serve warm with additional fresh red chilies on the side for an extra kick, if desired.
