Tahu Telur: Indonesian Tofu Omelette Delight
Ingredients:
- 4 pieces of white tofu, diced
- 2 eggs
- 100 grams of short bean sprouts
- 100 grams of fried peanuts
- 1 stalk of green onion, chopped
- 1/2 clove of garlic
- 7 bird’s eye chilies or to taste
- 2 tablespoons of fermented shrimp paste (petis)
- 2 tablespoons of sweet soy sauce
- Salt to taste
- Palm sugar to taste
- Fermented shrimp paste (terasi) to taste
- Ground black pepper to taste
- Chicken broth powder to taste
- Water as needed
Steps:

Prepare the Bean Sprouts:
- Bring a pot of water to a boil. Add the short bean sprouts and cook until they are tender. Drain and set aside.

Prepare the Tofu and Egg Mixture:
- In a bowl, beat the eggs and season with salt, chicken broth powder, and a pinch of ground black pepper. Add the diced tofu and chopped green onions, mixing well to combine.

Cook the Tofu Omelette:
- Heat a generous amount of oil in a non-stick skillet over medium heat. Pour in the tofu and egg mixture, spreading it evenly in the pan. Cook until the bottom is set and golden brown, then carefully flip to cook the other side until the omelette is fully cooked through. Remove from the pan and set aside.

Prepare the Sauce:
- Using a mortar and pestle, grind the garlic, bird’s eye chilies, and terasi together until you have a smooth paste. Add salt and palm sugar to taste, and continue to grind until well mixed.
- Incorporate the fried peanuts into the paste and continue to grind until the mixture is smooth.
- Gradually add a bit of water to the paste to reach your desired sauce consistency. Mix in the fermented shrimp paste (petis) and sweet soy sauce, adjusting the flavor to your taste.

Assemble and Serve:
- On a serving plate, arrange the cooked bean sprouts and the tofu omelette.
- Drizzle the prepared sauce over the top of the tofu and bean sprouts.
- For an authentic experience, serve with rice cakes (lontong) or compressed rice (ketupat) on the side.
