Abon Ikan Patin Recipe
Ingredients:

For the Fish:
- 250 grams of patin fish fillet

- 2 bay leaves
- 1 stalk of lemongrass (bruised)
- 2 kaffir lime leaves

- 6 cloves of garlic
- 4 shallots
- A pinch of coriander seeds
Steps:

Steam the Fish:
- Begin by heating water in a steamer pot. Once the water is boiling, place the patin fish fillet along with the bay leaves, lemongrass, and kaffir lime leaves into the steamer. Steam until the fish is tender and cooked through.

Shred and Marinate:
- After steaming, shred the patin fish fillet into fine pieces. Alternatively, you can pound the fish gently. Mix the shredded fish with the ground spice paste until well combined. Let it sit for about 2 minutes to allow the flavors to meld.

Dry Fry the Fish:
- Heat a non-stick pan over low heat. Add the marinated fish mixture and cook, stirring continuously, until the fish turns golden brown. Add the additional 2 kaffir lime leaves for extra fragrance.

Grind and Dry Fry Again:
- Once the fish mixture is browned, transfer it to a blender or food processor and blend until you achieve a floss-like texture. Return the blended mixture to the pan and dry fry again until it is thoroughly dry and crispy.
