Ingredients:
- 1 pomfret fish
- 200g squid, cleaned and sliced into rings
- Crispy coating mix (for frying)
- Sugar
- Salt
- Oyster sauce
- Spring onions
- White pepper
- Ground spices:
- Galangal
- Ginger
- Candle nuts
- 3-4 large red chilies
- 5-7 bird’s eye chilies
- Garlic
- Shallots

Prepare the Fish:
- Coat the pomfret fish evenly with the crispy coating mix, adding a little water to achieve a thick but not overly dense batter.
- Deep fry the fish in hot oil until crispy and golden brown. Set aside.

- Rinse the squid thoroughly and slice into 1cm rings.

- Taste the sauce and adjust seasoning if needed. Stir in chopped spring onions and remove from heat.
