Crispy Fried Pomfret with Sweet and Sour Squid Sauce Recipe

Ingredients:

  • 1 pomfret fish
  • 200g squid, cleaned and sliced into rings
  • Crispy coating mix (for frying)
  • Sugar
  • Salt
  • Oyster sauce
  • Spring onions
  • White pepper
  • Ground spices:
    • Galangal
    • Ginger
    • Candle nuts
    • 3-4 large red chilies
    • 5-7 bird’s eye chilies
    • Garlic
    • Shallots

Instructions:

  1. Prepare the Fish:

    • Coat the pomfret fish evenly with the crispy coating mix, adding a little water to achieve a thick but not overly dense batter.
    • Deep fry the fish in hot oil until crispy and golden brown. Set aside.
  2. Prepare the Squid:

    • Rinse the squid thoroughly and slice into 1cm rings.
  3. Make the Sauce:

    • Blend the ground spices until smooth, adding a little water to aid in blending.
    • Heat a small amount of oil in a pan and sauté the blended spices until fragrant.
    • Add the sliced squid and cook until tender. Season with sugar, salt, oyster sauce, and white pepper to taste.
    • Taste the sauce and adjust seasoning if needed. Stir in chopped spring onions and remove from heat.
  4. Assemble and Serve:

    • Place the crispy fried pomfret on a serving dish and generously pour the prepared sweet and sour squid sauce over it.
    • Serve hot with steamed rice for a delightful meal.
