Instructions

To create your Potato And Paneer Reuben Sandwich, start by preparing the sauce mixture. In a small bowl, combine the honey mustard dressing, lemon juice, tomato ketchup, and grated onion; stir well and set aside.

In a separate medium bowl, take the shredded hash browns, add the grated paneer, sprinkle in a pinch of salt, and mix everything thoroughly. Divide this mixture into four equal parts and shape them into patties. If the mixture seems loose, don’t worry; they will hold together during cooking.

Heat a skillet over medium heat and drizzle in the extra virgin olive oil. Once hot, carefully place the patties in the skillet and shallow fry them until they are crispy and golden brown on both sides, approximately 4-5 minutes per side. Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.

While the patties are frying, prepare the rye bread. Lay out the 8 slices on a clean board. Spread a thin layer of butter on one side of each slice. On 4 of the buttered slices, layer Swiss cheese slices and a generous helping of sauerkraut.

Once the patties are done, place one on top of the sauerkraut on each of the 4 slices. Top them with the remaining slices of bread, butter side down, gently pressing down to ensure everything stays in place.

Now, heat the skillet again over medium heat and arrange the sandwiches carefully in it. To ensure the cheese melts beautifully, press down on the sandwiches with a plate, placing a weight on top if possible. Cook for about 4-5 minutes until the bottom is golden brown, then carefully flip the sandwiches over and repeat on the other side until both sides are crispy and golden.

Your Potato And Paneer Reuben Sandwiches are now ready to serve! Pair them with a Herbed Potato Salad, a refreshing Pear & Alfalfa Sprouts Salad, or a wholesome Lentil Salad to create a complete, delicious meal that’s sure to satisfy your taste buds and keep you energized throughout the day.

Enjoy Your Meal!

This hearty sandwich not only satisfies your cravings but also offers a unique twist on the traditional flavors of a Reuben, making it a delightful addition to your breakfast or brunch repertoire. Enjoy!
