Potato Rösti with Smoked Salmon and Creamy Goat Cheese

Instructions:
- Prepare the Potatoes: Start by cooking the red potatoes. Place them in a pot with cold water and bring to a boil. Once cooked, peel the potatoes using a small knife.
- Season the Potatoes: After peeling, finely chop the wild fennel, chives, and thyme. Add them to the potatoes, and season with salt and pink peppercorns. Mix everything together until the ingredients are well combined, creating a uniform potato mixture.
- Form the Rösti: Take 90g of the potato mixture and place it inside a 9cm ring mold. Press the mixture down gently with your hands to form a round shape. Repeat this for the other portions.
- Cook the Rösti: Heat a non-stick skillet over medium heat and add the butter. Once the butter has melted and the pan is hot, place the rösti in the pan. Cook for 5 minutes on each side or until golden and crispy. If you have a large enough skillet, you can cook all four rösti at the same time.
- Prepare the Goat Cheese Cream: In a bowl, combine the goat cheese with the juice of half a lemon. Finely chop the chives and mix them into the goat cheese. Stir well to create a smooth, creamy mixture. Set the cheese cream aside.
- Assemble the Dish: Once the rösti are cooked, place one on each plate. Add a quenelle of goat cheese cream on top of each rösti, then garnish with a slice of smoked salmon on the side.
