Ratalu Pakoras are a delicious and unique twist on traditional pakoras, featuring purple yam slices dipped in a flavorful besan (gram flour) batter and deep-fried to golden perfection. These crispy and crunchy fritters make an irresistible snack, perfect for family gatherings and tea-time treats.

Ingredients:

  • 1 cup Purple yam (peeled and sliced)
  • 1 cup Gram flour (besan)
  • 1/2 cup Water
  • 1/2 teaspoon Salt
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1/4 teaspoon Asafoetida (hing)
  • Pinch of Baking soda
  • Oil (for deep frying)

Instructions:

  1. If using fresh purple yam, wash thoroughly and slice into long, even pieces.
  2. In a mixing bowl, combine gram flour (besan), salt, turmeric powder, red chili powder, asafoetida (hing), and baking soda. Mix well.
  3. Gradually add water to the dry ingredients, stirring continuously with a spatula. Aim for a thick batter consistency, similar to dosa batter.
  4. Heat oil in a wok or deep frying pan over medium heat. To test if the oil is hot enough, drop a small ball of batter into the oil; it should rise steadily to the surface.
  5. Dip each slice of purple yam into the batter, ensuring it is evenly coated, then carefully drop it into the hot oil. Fry until golden brown, flipping halfway through the cooking process for an even crisp.
  6. Remove from the oil and drain on paper towels to remove excess oil.
  7. Serve hot with a side of Dhaniya Pudina Chutney or Tomato Chutney for an extra burst of flavor.
