Instructions:
To begin making the delicious Red Berry Meringues, start by preparing the fruit. Rinse the raspberries and strawberries thoroughly under cold running water. Next, remove the green tops from the strawberries using a knife, and slice them in half. Once cleaned, place the raspberries and strawberries in a blender or food processor and blend them until you have a smooth, homogeneous pulp.
After blending, strain the fruit mixture through a fine-mesh sieve into a bowl, using a spatula or spoon to help push the pulp through. The goal is to extract about 75g of smooth fruit puree.
Once the puree is ready, transfer it to a saucepan, adding 100g of sugar. Heat the mixture over medium heat until it reaches a temperature of 121°C (250°F). While this is happening, place the egg whites into the bowl of a stand mixer. Begin beating the egg whites until they become frothy. Once the fruit syrup reaches the desired temperature, slowly pour it into the egg whites in a steady stream while continuing to beat. Continue mixing until you achieve a glossy and firm meringue.
Once your meringue mixture is ready, transfer it into a piping bag fitted with a star-shaped nozzle. Line a baking sheet with parchment paper and pipe out small mounds of meringue, spacing them a couple of centimeters apart.
After piping out all the meringue, place the baking sheet in a preheated static oven at 100°C (212°F) and bake for about 3 hours. The meringues should be firm to the touch and lightly golden on the underside. Unlike typical meringues, these will remain slightly soft on the outside, with a wonderfully crisp interior.
Once baked, allow the meringues to cool completely before serving. Enjoy the delightful combination of light, airy meringue and the sweet, tangy flavor of red berries!
