Crispy Fried Gurameh with Salted Egg Sauce Recipe
Ingredients:
- 1 whole gurameh fish, cleaned and filleted
- Cornstarch, as needed
- Cooking oil
- 2 tbsp margarine
- 2-3 salted egg yolks, mashed
- 3 large red chilies, sliced diagonally
- 5 sprigs of cilantro or 1/2 bunch of basil leaves, plucked
- 1 tbsp granulated sugar
- 1/4 tsp salt
Marinade for Fish:
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1 tbsp soy sauce
- 3 cloves garlic, minced
Instructions:
- Cut the fish fillets into smaller pieces.
- Marinate the fish in the marinade mixture for about 30 minutes. Set aside.
- Coat the marinated fish pieces evenly with cornstarch.
- Heat cooking oil in a pan and fry the fish bones and fillet pieces until golden brown and cooked through. Set aside the fried bones on a serving plate.
- In the same pan, fry the red chilies and cilantro or basil separately until crispy. Set aside.
- Heat margarine in the pan, add mashed salted egg yolks, and stir quickly for a few seconds.
- Add granulated sugar and salt.
- Mix in the fried red chilies and cilantro or basil.
- Finally, add the fried fish fillets and stir gently to coat evenly with the sauce.
- Serve hot with steamed white rice.
