Crispy Fried Gurameh with Salted Egg Sauce Recipe

Ingredients:

  • 1 whole gurameh fish, cleaned and filleted
  • Cornstarch, as needed
  • Cooking oil
  • 2 tbsp margarine
  • 2-3 salted egg yolks, mashed
  • 3 large red chilies, sliced diagonally
  • 5 sprigs of cilantro or 1/2 bunch of basil leaves, plucked
  • 1 tbsp granulated sugar
  • 1/4 tsp salt

Marinade for Fish:

  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1 tbsp soy sauce
  • 3 cloves garlic, minced

Instructions:

  1. Cut the fish fillets into smaller pieces.
  2. Marinate the fish in the marinade mixture for about 30 minutes. Set aside.
  3. Coat the marinated fish pieces evenly with cornstarch.
  4. Heat cooking oil in a pan and fry the fish bones and fillet pieces until golden brown and cooked through. Set aside the fried bones on a serving plate.
  5. In the same pan, fry the red chilies and cilantro or basil separately until crispy. Set aside.
  6. Heat margarine in the pan, add mashed salted egg yolks, and stir quickly for a few seconds.
  7. Add granulated sugar and salt.
  8. Mix in the fried red chilies and cilantro or basil.
  9. Finally, add the fried fish fillets and stir gently to coat evenly with the sauce.
  10. Serve hot with steamed white rice.
