Shrimp and Tofu Perkedel
Ingredients:
- 5 medium-sized tofu blocks
- 8 large prawns
- 1 packet of crispy tempeh flour (such as Kobe brand)
- 7 kaffir lime leaves, thinly sliced (remove stems)
- 1 egg
- 5 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1/2 cup water
- A pinch of salt (for the prawns)
- Cooking oil for frying

Prepare the Prawns: Clean the prawns, sprinkle with a pinch of salt, and cut into 1 cm pieces. Set aside.

Mix the Batter: In a large bowl, combine the crispy tempeh flour with the minced garlic. Add the egg and water, and mix until well combined.

Incorporate Tofu and Prawns: Crumble the tofu into the batter using a fork until it’s well integrated. Add the sliced kaffir lime leaves and the prawns. Stir to ensure everything is evenly mixed.

Fry the Perkedel: Heat oil in a pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy. Remove from the oil and drain on paper towels.

Serve: Enjoy your perkedel with a side of sliced fresh chilies, cuko pempek (a type of vinegar sauce), or pecel sauce.
