Shrimp and Tofu Perkedel

Ingredients:

  • 5 medium-sized tofu blocks
  • 8 large prawns
  • 1 packet of crispy tempeh flour (such as Kobe brand)
  • 7 kaffir lime leaves, thinly sliced (remove stems)
  • 1 egg
  • 5 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1/2 cup water
  • A pinch of salt (for the prawns)
  • Cooking oil for frying

Instructions:

  1. Prepare the Prawns: Clean the prawns, sprinkle with a pinch of salt, and cut into 1 cm pieces. Set aside.

  2. Mix the Batter: In a large bowl, combine the crispy tempeh flour with the minced garlic. Add the egg and water, and mix until well combined.

  3. Incorporate Tofu and Prawns: Crumble the tofu into the batter using a fork until it’s well integrated. Add the sliced kaffir lime leaves and the prawns. Stir to ensure everything is evenly mixed.

  4. Fry the Perkedel: Heat oil in a pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy. Remove from the oil and drain on paper towels.

  5. Serve: Enjoy your perkedel with a side of sliced fresh chilies, cuko pempek (a type of vinegar sauce), or pecel sauce.

This delightful Indonesian dish is perfect as a snack or appetizer and pairs wonderfully with your favorite dipping sauces.
