Ingredients
For the crust
- 1 cup All Purpose Flour (Maida)
- 1 cup Whole Wheat Flour
- 1 teaspoon Salt
- 2 tablespoons Ghee
- 1 teaspoon Ajwain (Carom seeds)
- Water, as required
For the filling
- 1/2 cup Soy granules
- 1 Onion, finely chopped
- 2 Green Chillies, finely chopped
- 1/4 cup Green peas (Matar), steamed
- 1 teaspoon Cumin seeds (Jeera)
- 1 tablespoon Oil
- 1 tablespoon Ginger Garlic Paste
- 1 teaspoon Coriander Powder (Dhania)
- 1 teaspoon Red Chilli powder
- 1/4 teaspoon Turmeric powder (Haldi)
- 1/2 teaspoon Garam masala powder
- 1 teaspoon Sugar
- Salt, to taste
- Oil, for deep frying

Prepare the dough
In a bowl, combine the maida, wheat flour, salt, ghee, and ajwain. Mix everything until it resembles breadcrumbs. Gradually add water to form a stiff dough. Cover with a damp cloth and let it rest for about 30 minutes. -
Prepare the filling
Bring 2 cups of water to a boil. Add 1 teaspoon salt and the soy granules. Let them submerge fully and soak for 12–15 minutes. Once softened, drain the water and set the soy granules aside. If using fresh peas, blanch them until cooked, then drain. -
Heat 1 tablespoon oil in a pan, add cumin seeds, and wait until they splutter. Add finely chopped onions and green chilies, cooking until the onions soften. Add ginger garlic paste and cook until the raw smell disappears.

Add the cumin powder, turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for about 15 seconds.

Add the soy granules and steamed peas, mixing thoroughly. Let it simmer for about 10 minutes so the flavors meld. Turn off the heat and allow the filling to cool completely.

Shape the samosas
Once the dough has rested, knead it again and divide it into 6 equal portions. Roll each portion into a 6-7 inch diameter circle. Cut each circle in half. -
Form a cone with each half-circle by folding and sealing the edges. Fill the cone with 1-2 tablespoons of the prepared soy granule filling. Seal the open edge with water and pinch tightly to close the samosa. Repeat with the remaining dough and filling.

Fry the samosas
Heat oil in a deep frying pan. Once the oil is hot, reduce the flame to medium and fry 2-3 samosas at a time, turning them occasionally, until golden brown on all sides. Remove and drain on absorbent paper.
