Arbi Kebab Recipe (Spicy Colocasia Kebab)
A delicious and spicy vegetarian appetizer, Arbi Ke Kebab is made with colocasia root (Arbi), mixed with flavorful ingredients like cabbage, onions, almonds, and spices. This recipe is perfect for parties, offering both a nutritious and flavorful bite. Ingredients:

  • 350g Colocasia root (Arbi), boiled and mashed
  • 2 sprigs Coriander leaves (Dhania)
  • 1/4 cup Almond Meal (Badam Powder)
  • 1 Green Chilli
  • 1-inch Ginger
  • 3 cloves Garlic
  • 1 tablespoon Whole Black Peppercorns
  • 1/2 cup Cabbage (Patta Gobi/ Muttaikose), finely chopped
  • 1 Onion, finely chopped
  • 1 teaspoon Ajwain (Carom seeds)
  • 1 teaspoon Chaat Masala Powder
  • 1 teaspoon Cumin powder (Jeera)
  • 1/4 teaspoon Cinnamon Powder (Dalchini)
  • 2 tablespoons Gram flour (besan)
  • Whole Wheat Bread crumbs (for coating)
  • Salt, to taste
  • Oil, for cooking

Preparation Time: 30 minutes

Cooking Time: 40 minutes

Instructions:

  1. Prepare the Ingredients: Begin by processing the fresh ingredients. In a food processor, blend the coriander leaves, almonds, green chilli, ginger, and garlic until you achieve a coarse mixture. Transfer this to a large mixing bowl.

  2. Mix the Kebab Mixture: To the same bowl, add the mashed Arbi and all remaining ingredients except for the breadcrumbs and oil. Mix everything thoroughly. Taste the mixture and adjust the salt and spices as per your preference.

  3. Shape the Kebabs: Since Arbi is starchy, it can be sticky. To avoid this, grease your palms with a tablespoon of oil. Shape the mixture into circular discs. Once shaped, roll them in breadcrumbs to coat evenly. Arrange the kebabs on a platter, ready for frying.

  4. Cook the Kebabs: Heat a pan over medium-high heat and grease it well with oil. Place the shaped kebabs in the pan, drizzle some oil over them, and pan fry until they are golden and crispy on both sides.

  5. Serve: Repeat the process for the remaining kebabs. Serve hot with a side of green chutney for dipping.
