Crispy Spicy Ayam Geprek with Garlic Chili Sauce

Title: Spicy Ayam Geprek

Ingredients:

For the Chicken:

  • 1/2 kg chicken breast

Blender Spice Mix:

  • 3 cloves garlic
  • 1/2 teaspoon white pepper

Dipping Batter:

  • 400 cc ice-cold water
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt

Dry Flour Coating:

  • 1/2 kg low-protein flour
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chicken bouillon powder

For Frying:

  • Oil (for deep frying)

Sambal (Chili Sauce):

  • 5 large cloves garlic
  • 20 red chilies
  • 10 large bird’s eye chilies
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 8 tablespoons hot oil

Instructions:

  1. Marinate the Chicken:

    • Combine the chicken breast with the blender spice mix. Place the mixture in the refrigerator and marinate for at least 1 hour to allow the flavors to infuse.
  2. Prepare the Flour Coating:

    • In a large bowl, mix together the low-protein flour, black pepper, and chicken bouillon powder.
  3. Make the Dipping Batter:

    • In another bowl, combine the ice-cold water, baking powder, and fine salt to create a batter.
  4. Coat the Chicken:

    • First, dredge the marinated chicken pieces in the dry flour coating, ensuring they are well-coated.
    • Next, dip the floured chicken pieces into the dipping batter.
    • Then, coat the chicken again in the dry flour mixture, pressing lightly to adhere the flour.
  5. Fry the Chicken:

    • Heat oil in a deep frying pan or pot over medium-high heat.
    • Fry the coated chicken pieces in the hot oil until they are golden brown and crispy. Remove from the oil and drain on paper towels.
  6. Prepare the Sambal:

    • In a mortar and pestle or a food processor, grind the garlic, salt, and sugar into a paste.
    • Add the red chilies and bird’s eye chilies, and grind coarsely.
    • Heat 8 tablespoons of oil until hot, then pour the hot oil over the chili paste and mix well.
  7. Combine and Serve:

    • Place the fried chicken on a serving plate. Using the back of a spoon or a pestle, gently press down on the chicken to “geprek” (smash) it slightly.
    • Generously spoon the sambal over the chicken, allowing the spicy sauce to coat the crispy pieces.
  8. Enjoy:

    • Serve your spicy ayam geprek hot, ideally with a serving of steamed rice. Enjoy the flavorful combination of crispy chicken and spicy sambal!
