Ingredients:

For the Chicken Wings:

  • 1-2 pounds chicken wings
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, minced
  • 1/2 tablespoon salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 large egg
  • 1/2 tablespoon black pepper
  • Cooking oil, for frying

For the Spicy Barbecue Sauce:

  • 1 packet barbecue sauce
  • 1/2 teaspoon black pepper
  • 3 bird’s eye chilies, finely chopped
  • 1/3 tablespoon sweet soy sauce (kecap manis)
  • Optional: Bon Cabe chili seasoning, for extra heat

Instructions:

  1. Prepare the Chicken Wings:

    • In a large pot, bring water to a boil and add the ginger and one clove of garlic. Add the chicken wings and simmer until tender, about 20-25 minutes. Once cooked, drain the wings and let them cool.
  2. Coat the Chicken Wings:

    • In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and the remaining minced garlic. Add the egg and mix until well combined.
    • Toss the cooled chicken wings in the flour mixture, ensuring they are evenly coated. Let the coated wings chill in the refrigerator for 45 minutes to 1 hour to help the coating adhere better.
  3. Fry the Wings:

    • Heat oil in a deep skillet or frying pan over medium-high heat. Once the oil is hot, carefully add the wings, frying in batches if necessary. Cook until golden brown and crispy, about 5-7 minutes per batch. Remove the wings from the oil and drain on paper towels.
  4. Prepare the Barbecue Sauce:

    • In a small bowl, mix the barbecue sauce with black pepper, finely chopped bird’s eye chilies, and sweet soy sauce. Adjust the heat level by adding Bon Cabe chili seasoning if desired.
  5. Combine and Serve:
