Ingredients:

  • 5 fried sunny-side-up eggs
  • 250 grams potatoes, cut into large chunks and fried
  • Sweet soy sauce (kecap manis), to taste
  • Salt, sugar, and pepper, to taste
  • 1 onion, finely chopped
  • 2 shallots, finely chopped
  • 4 cloves garlic, finely chopped
  • 1-2 green onions, sliced (for garnish)
  • Red or bird’s eye chilies, sliced (adjust quantity based on desired spiciness)
  • Water, as needed

Instructions:

  1. Prepare the Aromatics:
Heat a small amount of oil in a pan. Sauté the finely chopped onion, shallots, and garlic in the oil until fragrant and golden brown.

  2. Combine Ingredients:
Add the fried potatoes and eggs to the pan with the sautéed aromatics. Stir well to combine. Pour in a small amount of water, enough to help mix the ingredients together without making the dish too watery.

  3. Season and Simmer:
Add the sweet soy sauce to taste, along with salt, sugar, and pepper. Stir everything together, allowing the flavors to meld and the sauce to coat the potatoes and eggs evenly. Adjust the seasoning by adding more soy sauce or other spices as desired.

  4. Garnish and Serve:
Once the flavors are well combined and the dish is heated through, garnish with sliced green onions and red or bird’s eye chilies. Serve immediately and enjoy!

  5. Variations:
Feel free to customize this dish by substituting the eggs and potatoes with other ingredients like tofu, chicken, or tempeh, depending on your preference.

Enjoy this simple yet flavorful dish that combines the heartiness of potatoes with the richness of eggs and the savory sweetness of soy sauce.
