Spicy Chicken Wings

Ingredients:

  • 1/2 kg chicken wings
  • 1/4 kg rice flour
  • Salt, to taste
  • Black pepper, to taste
  • For the Sauce:
    • 2 large garlic cloves, minced
    • 3 tablespoons ketchup
    • 2 tablespoons chili sauce
    • 2 tablespoons sweet soy sauce (kecap manis)
    • 1 tablespoon oyster sauce
    • Cooking oil, as needed
    • Water, as needed

Instructions:

  1. Prepare the Chicken Wings:

    • Begin by washing the chicken wings thoroughly. Season with salt and black pepper, then let them sit for 15 minutes to absorb the flavors.
  2. Prepare the Coating:

    • Divide the rice flour into two portions. Keep one portion dry for coating the wings.
    • For the wet batter, mix the remaining rice flour with a small amount of water to create a smooth, thick batter.
  3. Coat the Wings:

    • Dip each chicken wing into the wet batter, ensuring it is fully coated. Then, roll it in the dry rice flour to coat evenly. Repeat until all the wings are coated.
  4. Fry the Wings:

    • Heat cooking oil in a pan over low heat. Fry the chicken wings in batches until they turn golden brown and crispy. Remove and set aside.
  5. Make the Sauce:

    • In a separate pan, heat a little oil and sauté the minced garlic until fragrant. Add the ketchup, chili sauce, sweet soy sauce, and oyster sauce. Stir well to combine and cook for a few minutes.
  6. Combine and Serve:

    • Add the fried chicken wings to the pan with the sauce. Toss them well to ensure that the wings are coated evenly with the sauce.
    • Cook for an additional few minutes until the sauce has thickened and adhered to the wings.
  7. Serving:

    • Serve the spicy chicken wings warm, garnished as desired.
