Ayam Geprek Sambel Bawang
Ingredients:
Chicken:
- 1/2 kg chicken (cut into desired pieces)
- 1 packet Kobe Super Crispy flour mix
For the marinade:
- 3 cloves garlic
- 3 shallots
- 1 piece ginger (approximately 1 inch)
- Salt to taste
For the sambal:
- 10 red bird’s eye chilies
- 1 large tomato
- 2 shallots
- 1 clove garlic
- Salt to taste
- Brown sugar to taste

Preparation:
- Thoroughly wash all the ingredients.

Marinate the Chicken:
- Blend the garlic, shallots, ginger, and salt until smooth to create the marinade.
- Marinate the chicken with this mixture and cook until the chicken is fully cooked. Once done, drain the chicken.

Coat the Chicken:
- Prepare two bowls: one with the Kobe Super Crispy flour mix in a wet batter, and another with the flour mix in a dry form.
- Dip each piece of marinated chicken first into the wet batter, then into the dry flour mix, gently pressing to ensure an even coating.

Deep Fry the Chicken:
- Heat a generous amount of oil in a deep fryer or a large pot over medium heat. Ensure there is enough oil to fully submerge the chicken pieces.
- Fry the chicken until it turns a golden brown and becomes crispy. Once done, remove and drain on paper towels.

Prepare the Sambal:
- Lightly fry the chilies, tomato, shallots, and garlic until they begin to soften.
- Drain and transfer these ingredients to a mortar and pestle, then grind until smooth.
- Add salt and brown sugar to taste, and adjust the seasoning as needed.

Combine and Serve:
- Smash the fried chicken with a pestle to infuse it with the sambal, making sure to evenly coat the chicken with the spicy sauce.
- Serve the Ayam Geprek with fresh vegetable sides and warm rice.
