Crispy Spiced Tempeh (Kering Tempe Renyah)

Ingredients

Main Ingredients
1 medium-sized tempeh (25×20 cm), cut into small pieces
Spice Paste
6 shallots
3 cloves garlic
2 cm young galangal
3 red bird’s eye chilies
Other Ingredients
3 curly red chilies, sliced diagonally
2 bay leaves
Juice of 1 ping pong-sized lime
Salt and sugar, to taste
2-3 tablespoons oil for sautéing

Instructions

  1. Fry the Tempeh: Begin by heating oil in a frying pan over medium heat. Fry the tempeh pieces until they turn a golden brown and crispy. Once done, remove from the pan and set aside on a plate lined with paper towels to absorb any excess oil.

  2. Prepare the Spice Paste: In the same pan, add a little more oil if needed, then sauté the ground spice paste until it becomes fragrant and aromatic. This should take about 2-3 minutes.

  3. Add Aromatics: Next, add the sliced curly red chilies and bay leaves to the pan, followed by sugar and salt. Stir well to combine all the ingredients evenly.

  4. Incorporate Lime Juice: Pour in the freshly squeezed lime juice, stirring to mix everything together. Taste the mixture and adjust the seasoning with more salt or sugar as needed. Allow the mixture to simmer until the liquid reduces and the spices become thicker, which should take about 5-7 minutes.

  5. Combine with Tempeh: Once the spice mixture has thickened and cooled slightly, add the fried tempeh pieces to the pan. Stir gently to ensure all the tempeh is well-coated with the spiced mixture.

  6. Cool and Store: Let the tempeh mixture cool completely at room temperature before transferring it to an airtight container. Store in a cool, dry place or refrigerate for longer shelf life.
