Spicy Tofu Martabak with Spring Roll Wrappers

Ingredients:

  • 12 sheets of spring roll wrappers (lumpia wrappers)
  • 4 blocks of white tofu
  • 2 stalks of green onions, finely sliced
  • 1 stalk of celery, finely sliced
  • 3 eggs (I used only 2 since they were quite large)
  • 1 tablespoon of flour mixed with 2 tablespoons of water (for sealing the wrappers)
  • Adequate oil for frying

Spice Mix:

  • 3 cloves of garlic
  • 1/2 packet of ground pepper
  • Salt, sugar, and chicken bouillon powder to taste
  • 3-4 red curly chilies, thinly sliced
  • 2 small carrots, coarsely grated

Instructions:

  1. Prepare the Filling:

    • Mash the white tofu in a large bowl.
    • Mix in the finely sliced green onions, celery, eggs, grated carrots, and the spice mix. The spice mix includes finely minced garlic, ground pepper, salt, sugar, chicken bouillon powder, and thinly sliced red curly chilies.
    • Taste the mixture to ensure the seasoning is to your preference.
  2. Prepare the Wrappers:

    • Take one sheet of spring roll wrapper and place about 1 tablespoon of the tofu mixture in the center.
    • Fold the wrapper neatly like an envelope, ensuring all sides are sealed properly. Use the flour-water mixture as glue to secure the edges so the filling doesn’t spill out during frying. Repeat this process until all the tofu mixture is used.
  3. Frying:

    • Heat a generous amount of oil in a pan over medium-low heat.
    • Fry the martabak until they turn golden brown on all sides. Make sure to flip them occasionally to ensure even frying.
    • Once cooked, remove them from the pan and let them drain on paper towels to remove excess oil.
  4. Serving:

    • Serve the Spicy Tofu Martabak hot and enjoy the crispy, spicy flavors. This dish makes for a delicious snack or appetizer.
