Spicy Tofu Martabak
Ingredients:

- 20 sheets of store-bought spring roll wrappers
- 1 block Chinese tofu
- A handful of green onions, chopped
- 5 red bird’s eye chilies, chopped
- Seasoning powder (to taste)
- 1 egg, beaten (for sealing the spring roll wrappers)
- Salt (to taste)
- Vegetable oil, for frying
Instructions:

Prepare the Filling:
- In a mixing bowl, crumble the tofu using a fork until it reaches a fine, mash-like consistency.
- Add the chopped bird’s eye chilies, green onions, salt, and seasoning powder to the tofu. Mix thoroughly and adjust the seasoning to taste.

Assemble the Martabak:
- Lay out a sheet of spring roll wrapper on a clean surface.
- Place a spoonful of the tofu mixture in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edges with a brush of beaten egg. Repeat this process until all the filling is used.

Fry the Martabak:
- Heat a generous amount of vegetable oil in a frying pan over medium heat.
- Fry the assembled martabaks in batches, turning occasionally, until they are golden brown and crispy on all sides.
- Remove from the oil and drain on paper towels.

- Serve the spicy tofu martabak hot, and enjoy as a flavorful snack or appetizer!
