  • 2 medium onions, finely chopped
  • 2 red chilies, sliced
  • 2 green chilies, sliced

  • 7 red cherries, pitted and halved
  • 5 green onions (spring onions), chopped for garnish

Instructions

  1. Marinate the Chicken: Begin by marinating the chicken pieces in a mixture of salt, sugar, and cornflour. Let it sit for about 10 minutes, allowing the flavors to meld and the cornflour to tenderize the chicken.

  2. Prepare the Chicken: In a skillet or frying pan, heat 1/2 teaspoon of oil over medium heat. Add the finely chopped gingerroot and minced garlic. Sauté until they turn a light golden brown, releasing their aromatic flavors.

  3. Cook the Chicken: Add the marinated chicken to the pan. Sauté for 3-4 minutes, stirring frequently until the chicken starts to brown. If needed, add a little water at intervals to ensure the chicken cooks evenly and becomes tender. Once done, set the cooked chicken aside.

  4. Crisp the Spinach: In a separate frying pan, heat oil over medium heat. Add the spinach in batches, frying each batch until crispy. Be sure to drain the spinach thoroughly after frying to remove excess oil. Set the crispy spinach aside.

  5. Sauté the Vegetables: In a wok or large pan, heat another 1/2 teaspoon of oil. Add the chopped onions and sliced red and green chilies. Sauté until the onions are translucent and the chilies are fragrant.
