Recipe: Baatis

Ingredients:
- 500g wheat flour
- 300g ghee
- 1 tsp salt
- 250g potatoes, peeled and mashed
- 1/2 tsp jeera powder (cumin powder)
- 1 green chili, finely chopped
- 1 tsp ginger paste
- 1/2 tsp kala namak (black salt)
- 1 tsp garam masala
- 1/2 tsp cardamom powder
- 1 tsp red chili powder
- Handful of chopped coriander leaves
- 2 cinnamon sticks (dalchini)
- 10-15 strands of mace (javitri)
- 10-15 cashew nuts (kaju)
- 10-15 raisins (kishmish)
- 1 tejpatta (bay leaf)

Servings: 15-16 Baatis
Instructions:
1. Making the Stuffing:
- Peel the potatoes and mash them.
- Heat oil in a kadahi (Indian wok).
- Add cinnamon sticks, mace, cardamom, cashew nuts, raisins, bay leaf, cumin powder, green chili, and ginger paste.
- Mix in the mashed potatoes.
- Add roasted cumin powder, black salt, regular salt, garam masala, coriander powder, red chili powder, and chopped coriander leaves.
- Fry for 4-5 minutes until fragrant.
- Set aside to cool.
2. Making the Dough:
- Melt 200g of ghee.
- In a large bowl, combine wheat flour, melted ghee, and salt.
- Gradually add water to make a stiff dough.
- Divide the dough into 15-16 equal-sized balls.
3. Stuffing and Cooking:
- Take each dough ball and flatten it slightly.
- Place a spoonful of the prepared stuffing in the center.
- Gather the edges and seal the stuffing inside, shaping it into a ball again.
- Preheat a gas tandoor or oven to high heat.
- Grill the stuffed balls until golden brown and crispy on the outside, rotating them occasionally for even cooking.
- Heat the remaining ghee in a small pan.
- Dip each baati in the hot ghee before serving.
4. Serving:
- Serve the baatis hot with dal (lentil soup) and potato bharta (mashed potato dish).
Notes:
- Baatis can also be baked in a preheated oven at 200°C (400°F) for 20-25 minutes or until golden brown.
- Adjust the spice levels according to your preference.
- Leftover baatis can be stored in an airtight container and reheated in the oven or microwave before serving.
