Tahu Aci Kwalik: Savory Indonesian Tofu Delight

Ingredients

White Tofu (preferably soft tofu) 3 pieces
Shallots (finely chopped) 2 pieces
Garlic (finely chopped) 2 cloves
Ground Pepper To taste
Salt To taste
Celery (finely chopped) To taste
Green Onions (sliced) To taste
Tapioca Flour 3 tablespoons
All-Purpose Flour 1 tablespoon
Hot Water As needed

Instructions

  1. Begin by cutting the tofu into triangular pieces, then fry them in hot oil until they are crisp and golden brown. This step helps achieve the perfect texture.
  2. Once fried, soak the tofu in a mixture of ground pepper and salt, allowing it to absorb the flavors for a few minutes.
  3. Carefully slice the fried tofu open, making sure not to cut all the way through, and flip them over to create a pocket for the filling.
  4. For the filling, combine all-purpose flour, tapioca flour, finely chopped shallots and garlic, ground pepper, salt, and optional chicken stock powder in a mixing bowl.
  5. Gradually add hot water, mixing until the dough is smooth and pliable.
  6. Fill each tofu pocket with the prepared mixture, ensuring they are generously stuffed.
  7. Finally, return the stuffed tofu to the hot oil and fry until golden and crispy on the outside.
  8. Serve hot with chili sauce or sambal for an extra kick.
