Ingredients

  • 3 shallots

  • 1/2 inch piece of turmeric

  • Water as needed

Instructions

  1. Prepare the Tofu:

    • Cut each of the 4 tofu pieces into quarters. Heat oil in a pan and fry the tofu pieces until golden and crispy. Once fried, slice open the middle of each tofu piece to create a pocket. Set aside.
  2. Prepare the Filling:

    • Blend the red curly chilies, bird’s eye chilies, garlic, and shallots into a smooth paste.
    • Heat a little oil in a pan and sauté the chili paste until aromatic and cooked through.
    • Add a small amount of water to the pan, then introduce the diced carrots. Cook until the carrots are tender.
    • Stir in the crumbled tofu. Season with salt and sugar to taste. Mix well and adjust the seasoning if needed. Remove from heat and let it cool.
  3. Stuff the Tofu:

    • Spoon the prepared filling into the pockets of the fried tofu. Ensure each piece is generously filled.
  4. Prepare the Flour Coating:

    • Blend the garlic and turmeric into a smooth paste.
    • Combine the garlic-turmeric paste with the all-purpose flour and salt in a mixing bowl. Gradually add water to form a thick batter. The consistency should be like a pancake batter—neither too thick nor too runny.
  5. Coat and Fry the Tofu:

    • Dip each stuffed tofu piece into the flour batter, coating it evenly.
    • Heat oil in a frying pan and fry the coated tofu until golden brown and crispy.
