Ingredients

Ingredient Quantity
Tahu Sumedang (large tofu) 10 pieces
Carrots (grated) 2 ounces
Bean sprouts ¼ cup
Corn noodles 1 sheet
Green onions To taste
Celery To taste
Spices (to be ground)
Shallots 5 cloves
Garlic 3 cloves
Pepper (whole or ground) 1 tablespoon
Candlenuts (kemiri) 2 pieces
Salt 2 teaspoons
Sugar 1 teaspoon
Batter Ingredients
Sajiku flour 1 packet
All-purpose flour ¼ kg
Water (as needed)
Oil (for frying) Sufficient amount

Instructions

  1. Prepare the Tofu:

    • Slice the tofu into two equal halves and deep-fry them in hot oil until golden brown. Once cooked, let them cool and carefully cut open the top to create pockets for the filling. Your tofu should now be hollow.
  2. Prepare the Filling:

    • Rinse the bean sprouts, green onions, and celery thoroughly, then slice them thinly and set them aside.
    • Peel and wash the carrots, then grate them using a cheese grater for fine shreds.
    • Boil water in a pot, then submerge the corn noodles for about 3 minutes. Drain and set aside.
  3. Make the Spice Mixture:

    • Blend the shallots, garlic, pepper, and candlenuts into a smooth paste.
  4. Cook the Filling:

    • In a frying pan, heat 3 tablespoons of oil over medium heat. Add the ground spice mixture and sauté until fragrant and cooked through.
    • Add the corn noodles, grated carrots, bean sprouts, and chopped green onions and celery to the pan. Season with salt and sugar, then stir-fry until everything is well combined and cooked. Avoid adding water to keep the filling dry. Allow the mixture to cool.
  5. Stuff the Tofu:

    • Once the filling has cooled, carefully stuff each piece of hollow tofu with the vegetable and noodle mixture. Pack the filling tightly to prevent it from falling out during frying.
  6. Prepare the Batter:

    • In a mixing bowl, combine the sajiku flour, all-purpose flour, and a pinch of salt. Gradually add water while stirring to achieve a smooth batter consistency, ensuring it’s not too runny.
  7. Fry the Tofu:

    • Heat a generous amount of oil in a deep frying pan. Once the oil is hot, dip each stuffed tofu into the batter, allowing any excess to drip off before carefully placing it into the hot oil.
    • Fry until the tofu is golden brown and crispy, about 4–5 minutes. Make sure to fry in batches to avoid overcrowding the pan. Remove and drain on paper towels.
  8. Serve:

    • Your delicious Tahu Isi Mie & Sayur Crispy is now ready to enjoy! Serve hot as a snack or appetizer and watch them disappear quickly.
