Ingredients:

  • For the Tofu Filling:

    • 20 pieces of fried tofu (tahu goreng) or tofu puffs
    • 200 grams of bean sprouts (cambah panjang)
    • 50 grams of grated carrot
    • 1 bunch of finely chopped celery leaves
    • 1 tablespoon of oyster sauce (saus tiram)
    • Cooking oil (for frying)
  • For the Spice Paste:

    • 3 cloves of garlic
    • 10 small red chilies (cabe rawit), adjust to taste
  • For the Batter:

    • 150 grams of all-purpose flour
    • 50 grams of tapioca flour (tepung kanji)
    • 2 cloves of garlic
    • 2 pieces of fresh turmeric (kunyit), peeled
    • 1 teaspoon of coriander seeds (ketumbar)
    • 100 ml of water
  • For the Dipping Sauce:

    • 2 shallots, thinly sliced
    • 5 small red chilies, thinly sliced
    • 2 tablespoons of sweet soy sauce (kecap manis)

Instructions:

  1. Prepare the Tofu:

    • Gently create a pocket in each piece of fried tofu by cutting a slit along one side. Be careful not to cut all the way through so that the filling stays inside while frying.
  2. Prepare the Vegetable Filling:

    • In a skillet over medium heat, add a splash of oil and sauté the garlic until fragrant.
    • Add the red chilies and continue to cook until they soften.
    • Stir in the oyster sauce and grated carrots, cooking until the carrots begin to soften.
    • Add the bean sprouts and cook until they are wilted. Taste and adjust seasoning as needed.
