Zucchine a Pullastiello (Stuffed Fried Zucchini)
Category: Main Courses
Servings: 14

Ingredients:

Ingredient Quantity
Zucchini (fresh) 400g
Smoked Provola Cheese 130g
Neapolitan Salami 70g
Eggs 2
Salt To taste
Black Pepper To taste
All-Purpose Flour As needed

Instructions:

  1. Begin by preparing the zucchini. Wash and trim the ends, then slice the zucchini diagonally into pieces about 5-6 mm thick.

  2. Heat a generous amount of oil in a deep fryer or pan, bringing it to around 160°C (320°F) for frying.

  3. Fry the zucchini slices in batches, ensuring that you don’t overcrowd the pan. In about 2-3 minutes, the slices will turn golden and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil. Continue frying the remaining slices.

  4. While the zucchini is cooling, cut the smoked provola cheese into thin slices (about 3-4 mm thick). Pat the cheese slices dry with paper towels to remove excess moisture.

  5. Next, slice the Neapolitan salami into thin rounds, approximately 1-2 mm in thickness. You’ll need 14 slices, one for each zucchini “sandwich.”

  6. Now it’s time to assemble the stuffed zucchini. On each fried zucchini slice, place a piece of provola cheese, and top with a slice of salami. Carefully place another slice of zucchini on top, creating a little “sandwich.”

  7. In a shallow bowl, beat the eggs with a pinch of salt and black pepper until well combined.

  8. Gently dip each stuffed zucchini into the egg mixture, making sure it’s fully coated.

  9. Heat the oil again to 160°C (320°F) and fry the zucchini sandwiches, a few at a time. After about 3-4 minutes, they should be golden and crispy. Remove them from the oil and let them drain on paper towels.

  10. Continue this process until all zucchini pieces are fried and ready to serve.

  11. Serve the zucchini pullastiello hot and enjoy their delicious combination of crispy fried zucchini, smoky cheese, and savory salami. Perfect as a main course, especially when served with a side of your favorite salad!

Tips:

  • For an extra crispy texture, you can lightly coat the zucchini slices with flour before frying.
  • If you prefer a lighter version, you can bake the stuffed zucchini in the oven instead of frying them.
  • This dish is best enjoyed fresh and hot, but it can also be stored in the fridge for up to a day and reheated before serving.

Enjoy these crispy, stuffed zucchini bites that are bursting with flavor!
