Sweet and Sour Fried Snapper
Ingredients:
- 1/4 kg snapper fillet, cleaned
- 6 tablespoons all-purpose flour
- 3 tablespoons seasoned flour mix
- 1/2 teaspoon salt
- Ground black pepper, to taste
- Ice water (for dipping)
- For the Sauce:
- 1 clove garlic, crushed and finely chopped
- 1 small onion, sliced
- Carrot slices, to taste
- 1 teaspoon oyster sauce
- 2 sachets tomato ketchup
- 1 sachet chili sauce
- Salt, sugar, and ground black pepper, to taste
- 1/3 teaspoon seasoned flour mix (for thickening)
Instructions:

Prepare the Fish:
- Dip the snapper fillets in the all-purpose flour, then into ice water, and back into the seasoned flour. Ensure the fillets are well-coated and allow excess flour to drain off.
- Heat oil in a pan and fry the fillets until they are golden brown and crispy. Remove from the oil and set aside on paper towels to drain.

Prepare the Sauce:
- In a separate pan, heat some butter and sauté the sliced onion and garlic until they become fragrant and translucent.
- Add the carrot slices and continue to sauté until they are half-cooked.
- Pour in enough water to cover the vegetables and bring to a simmer.
- Stir in the oyster sauce, tomato ketchup, and chili sauce. Season with salt, sugar, and pepper to taste.
- Mix in the seasoned flour to thicken the sauce. Stir well and cook for a few more minutes until the sauce is smooth and slightly thickened.

Combine and Serve:
