Crispy Sweet and Sour Snapper Fillets

Sweet and Sour Fried Snapper

Ingredients:

  • 1/4 kg snapper fillet, cleaned
  • 6 tablespoons all-purpose flour
  • 3 tablespoons seasoned flour mix
  • 1/2 teaspoon salt
  • Ground black pepper, to taste
  • Ice water (for dipping)
  • For the Sauce:
    • 1 clove garlic, crushed and finely chopped
    • 1 small onion, sliced
    • Carrot slices, to taste
    • 1 teaspoon oyster sauce
    • 2 sachets tomato ketchup
    • 1 sachet chili sauce
    • Salt, sugar, and ground black pepper, to taste
    • 1/3 teaspoon seasoned flour mix (for thickening)

Instructions:

  1. Prepare the Fish:

    • Dip the snapper fillets in the all-purpose flour, then into ice water, and back into the seasoned flour. Ensure the fillets are well-coated and allow excess flour to drain off.
    • Heat oil in a pan and fry the fillets until they are golden brown and crispy. Remove from the oil and set aside on paper towels to drain.
  2. Prepare the Sauce:

    • In a separate pan, heat some butter and sauté the sliced onion and garlic until they become fragrant and translucent.
    • Add the carrot slices and continue to sauté until they are half-cooked.
    • Pour in enough water to cover the vegetables and bring to a simmer.
    • Stir in the oyster sauce, tomato ketchup, and chili sauce. Season with salt, sugar, and pepper to taste.
    • Mix in the seasoned flour to thicken the sauce. Stir well and cook for a few more minutes until the sauce is smooth and slightly thickened.
  3. Combine and Serve:

    • Pour the sauce over the fried snapper fillets or serve the sauce on the side for dipping. Enjoy your Sweet and Sour Fried Snapper with your favorite side dishes.
