Tahu Aci Asik: A Crispy Indonesian Delight
Ingredients
- 14 pieces of yellow tofu
- 2 cloves garlic
- 1500 grams green onions (purchased from the market)
- A pinch of salt
- Coriander to taste
- Royco seasoning or equivalent
- Cooking oil
- 1 medium-sized carrot
- 3 tablespoons rice flour
- 2 tablespoons tapioca flour
- Water (as needed)
Instructions
-
Prepare the Tofu: Begin by thoroughly cleaning the yellow tofu. Slice each piece into two triangular sections, being careful not to tear the edges. Use a spoon to hollow out the center of each tofu piece, ensuring the sides remain intact to hold the filling.
-
Make the Spice Mixture: In a mortar and pestle, finely grind together the garlic, coriander, and a pinch of salt. Add the scraped tofu flesh to the spice mixture and blend until well combined.
-
Add Vegetables and Flours: Finely chop the green onions and grate the carrot. Incorporate these into the spiced tofu mixture. Then, stir in the rice flour and tapioca flour. Gradually add water to achieve a slightly thick consistency—be cautious not to make it too runny, as it needs to adhere well to the tofu.
-
Stuff the Tofu: Carefully spoon the mixture into the hollowed tofu pieces, filling them generously. Place the stuffed tofu in the freezer for about 1 hour to ensure the filling adheres properly.
-
Fry the Tofu: Heat cooking oil in a pan over low heat. Gently place the tofu into the hot oil. Avoid flipping them too early to prevent them from breaking apart. Fry until the first side is golden brown before carefully turning them to fry the other side.
-
Serve: Enjoy your Tahu Aci Asik warm, straight from the pan, as a delicious snack or appetizer.
