Crispy Tahu Aci: Indonesian Tofu Fritters with Spicy Soy Dipping Sauce
Tahu Aci khas Slawi/Tegal: A Delightful Indonesian Snack
Ingredients:
- 10 pieces of yellow tofu
- 10 tablespoons sago flour
- 5 tablespoons all-purpose flour
- 2 green onions (thinly sliced)
- Hot water (as needed)
- For the Spice Mixture:
- 3 cloves garlic
- 1 teaspoon coriander seeds
- Salt, to taste
- Optional: seasoning or MSG, to taste

Begin by cutting the tofu diagonally, creating two triangular pieces from each block. Carefully scoop out a small portion of the center of each tofu piece. For a more efficient process, you can score the tofu with a knife and then gently remove the scooped portion. The leftover tofu scraps can be mixed into the batter later.

In a mixing bowl, combine the sago flour, all-purpose flour, sliced green onions, the tofu scraps, and the finely ground spice mixture. To make the spice mixture, blend the garlic, coriander seeds, and salt (and optional seasoning) together until smooth.

Gradually add hot water to the flour mixture, a little at a time, while stirring until the batter reaches a consistency that can be molded. Be cautious not to add too much water; the batter should be thick enough to hold its shape.

Heat oil in a frying pan over medium heat. Using a fork, scoop out portions of the batter and flatten them slightly with the back of the fork. Carefully drop these pieces into the hot oil.

Fry the tofu until they turn a golden brown and crispy on the outside. Continue frying until all the batter is used up. Once done, remove the tofu from the oil and drain on paper towels to remove excess oil.
