Lumpia with Tofu and Egg

Ingredients:

For the Wrapper:

  • 250 grams all-purpose flour
  • 3 tablespoons tapioca starch
  • 3 tablespoons cornstarch
  • 1 egg
  • 2 teaspoons salt
  • 4 tablespoons vegetable oil
  • Water, as needed

For the Filling:

  • 3 pieces of yellow tofu (white tofu can also be used)
  • 2 eggs
  • 5 tablespoons all-purpose flour
  • 2 tablespoons tapioca starch
  • 2 teaspoons salt (to taste)
  • 1 teaspoon sugar (to taste)
  • 3 shallots
  • 2 garlic cloves
  • 4 chili peppers (adjust to taste)
  • 2 teaspoons soy sauce
  • 2 teaspoons seasoning powder (optional)

For Frying:

  • 500 grams vegetable oil

Instructions:

  1. Prepare the Wrapper:

    • In a mixing bowl, combine the all-purpose flour, tapioca starch, cornstarch, egg, and salt. Gradually add water while stirring to create a smooth batter. Continue adding water until the batter is thin and free of lumps.
    • Strain the batter through a fine sieve to ensure it is perfectly smooth and lump-free.
  2. Make the Filling:

    • Start by preparing the seasoning for the filling. Blend the chili peppers, shallots, garlic, sugar, and salt in a food processor until finely ground.
    • Mash the tofu in a separate bowl. Mix in the all-purpose flour, tapioca starch, eggs, the blended seasoning, soy sauce, and seasoning powder (if using). Combine everything thoroughly until well mixed.
  3. Cook the Wrappers:

    • Heat a non-stick skillet over medium heat. Pour a thin layer of the batter into the skillet, swirling to create a round, even layer. Cook until the edges start to lift and the surface appears dry. Remove from the skillet and place on a plate.
  4. Assemble the Lumpia:

    • Place a spoonful of the tofu filling in the center of each cooked wrapper. Fold the sides over the filling and roll tightly to enclose.
  5. Fry the Lumpia:

    • Heat the vegetable oil in a deep fryer or large pan over medium-high heat. Fry the lumpia in batches, turning occasionally, until they are golden brown and crispy.
    • Remove from the oil and drain on paper towels.
  6. Serve:

    • Serve the lumpia hot, as a delicious snack or appetizer.
