Instructions

  1. Prepare the Noodles: Begin by boiling the white noodles in water until they are tender. Drain and set aside.

  2. Chop the Vegetables: Peel the shallots, garlic, and carrot. Using a mortar and pestle, finely grind the shallots and garlic together, then add ground pepper to taste.

  3. Combine Ingredients: In a large mixing bowl, transfer the ground mixture. Add in the white tofu, chopped carrot, cooked noodles, 3 whole eggs, and a sprinkle of all-purpose flour, adjusting to achieve the desired consistency.

  4. Season the Mixture: Mix everything thoroughly by kneading it with your hands until smooth and uniform. Season with the Masako seasoning and salt as needed.

  5. Prepare for Steaming: Place the mixture into a plastic wrap or mold, ensuring it’s not too thick. Steam the tofu mixture for 20-30 minutes, or until firm to the touch.

  6. Cool and Cut: Once the mixture has set, remove it from the steamer and let it cool in cold water for a moment.

  7. Fry the Tofu: Heat oil in a frying pan. Beat the remaining eggs in a bowl. Cut the firm tofu into slices and dip them into the beaten eggs before frying.

  8. Cook Until Golden: Fry the tofu slices until they are golden brown and cooked through. Drain on paper towels to remove excess oil.
